plum, cucumber, and basil quinoa salad


⅓ cup uncooked quinoa
6 plums
1 cucumber
½ tsp extra virgin olive oil
2 Tbsp chopped fresh basil
2 Tbsp apple cider vinegar
¼ tsp salt
⅛ tsp pepper

To prepare the quinoa, place the quinoa and ⅔ cup of water in a pot on the stove. Bring the water to a boil, then lower to a simmer and cover with a lid. Cook quinoa for 10-14 minutes, or until the quinoa is fluffy. Once quinoa is done, remove from heat, place in a mixing bowl, stir in the olive oil, and allow to cool in the refrigerator. Thoroughly wash the plums and cucumber then dice them into small pieces. Once the quinoa has cooled, add the plum, cucumber, chopped basil, apple cider vinegar, salt, and pepper. Stir until well incorporated, serve, and enjoy!
