Zany Zucchini Hummus

INGREDIENTS

  • 2 medium zucchini, peeled and thinly sliced
  • 1 Tbsp olive oil, divided
  • 1 can (15 oz) chickpeas, no salt added, drained and rinsed (reserve 2 Tbsp liquid)
  • 1 garlic clove
  • 2 Tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp cumin
  • ⅛ tsp black pepper

DIRECTIONS

In a pan sauté zucchini in ½ Tbsp olive oil over medium high heat for about 15 minutes, or until zucchini is translucent. Allow to cool and add zucchini, chickpeas, and garlic to food processor or blender. Pulse until well chopped.  Add in remaining olive oil, reserved chickpea liquid, lemon juice, salt, cumin, and pepper and process until smooth.
