Superfood Kale Salad


  • 1 bunch (about 6oz) of kale, chopped
  • Juice of 2 lemons
  • 2 Tbsp extra virgin olive oil
  • ½ Tbsp honey
  • ⅛ tsp salt
  • ⅛ tsp ground black pepper
  • ⅛ tsp garlic powder
  • 1½ cups chopped broccoli (about 1 small head)
  • 1 cup shredded carrots
  • 1 large tomato, chopped
  • ¾ cup blueberries
  • 3 Tbsp sliced almonds
  • 2 Tbsp dried cranberries

In a large salad bowl, add the kale, lemon juice, olive oil, honey, salt, pepper, and garlic powder. Thoroughly coat the kale with the salad dressing by massaging the kale in with your hands. Then, add all of the other ingredients and continue to mix well. Allow the salad to sit for at least 30 minutes in order for the kale to absorb the dressing. Serve as is or with grilled chicken. Avocado is a great addition to this salad as well!
