Super Duper Sweet Potato Dip

INGREDIENTS

  • 2 medium sweet potatoes
  • 1 Tbsp olive oil
  • ⅓ cup nonfat plain Greek yogurt
  • 1 tsp honey
  • ¼ tsp salt
  • Crackers or pita chips

DIRECTIONS

Preheat oven to 375°F. Rinse and peel the sweet potatoes, and then chop into bite size pieces. Place the sweet potatoes in a bowl and toss with olive oil. Spread potatoes in single layer on baking sheet lined with aluminum foil. Roast for 25 to 30 minutes or until potatoes are tender. Allow to cool and then mash the sweet potatoes. In a medium bowl mix potatoes, yogurt, honey, and salt together until combined. Serve with crackers or chips.
