Roasted and Spiced Chayote

INGREDIENTS

4 chayote squash
2 tsp olive oil
½ tsp salt
½ tsp chili powder
½ tsp garlic powder

DIRECTIONS

Preheat oven to 450°F. Slice each chayote squash in half
and remove center seed. Place chayote cut side down
to cut each half into wedges (approximately 6 wedges
per half squash). Add wedges to a mixing bowl along
with olive oil, salt and spices. Toss until each wedge is
evenly coated. Place squash wedges on a baking sheet
and put pan into preheated oven. Roast for 20 minutes,
remove from oven, turn each piece over and roast for
another 15 to 20 minutes or until squash is tender and
edges are slightly browned. Serve immediately.
