Bringing The Heat Honeydew Salad

INGREDIENTS

  • 1 medium honeydew melon, chopped
  • 1 jalapeño, seeded and diced
  • 1 Tbsp honey
  • ½ Tbsp olive oil
  • Juice of ½ lime
  • ¼ tsp salt
  • ¼ tsp chili powder or Sriracha
  • ⅓ bunch cilantro, chopped
  • 3 Tbsp pepitas or chopped peanuts

DIRECTIONS

Place melon and jalapeño in a medium bowl. In a separate small bowl, whisk together honey, olive oil, lime juice, salt, and chili powder. Pour dressing over melon and jalapeño and toss. Top with cilantro and pepitas or peanuts.
