Veronica Cabrera is a Program Coordinator for Brighter Bites in Austin. She first discovered Brighter Bites through the Andy Roddick Foundation while she was a camp mentor in the summer of 2018. She was immediately captivated by the Brighter Bites mission and the incredible work in nutrition education the organization provides to children and their families in underserved communities, and she joined the organization as a program associate. In her work with Brighter Bites, Veronica enjoys connecting with children and their families in schools, making even the smallest difference in their lives with the hope of making an exponential difference in their health in the future.

Veronica has been passionate about science, health, and nutrition since her teenage years and aspires to help others as a health professional someday. She graduated from the University of Texas at Austin with an undergraduate degree in nutrition and dietetics and hopes to further her knowledge and education in nutrition and by becoming a certified, registered dietitian in the future.

In her spare time, Veronica enjoys jogging by the lake, rollerblading, playing pool, and watching the latest thriller.
