Amy Priebe
Chief Operating Officer
Amy is the chief operating officer for Brighter Bites. Based in Chicago, IL, Amy focuses on strengthening the organization’s operations and programming to ensure they are as effective, efficient, and sustainable as possible. Amy works closely with teams across the organization to support execution, drive continuous improvement, and enable Brighter Bites to deliver high-quality impact for the communities it serves.
Amy earned her undergraduate degree in economics from the University of Illinois at Urbana-Champaign before completing the intensive L’Art de la Pâtisserie program at the French Pastry School in Chicago. She spent six years working in some of the Midwest’s top kitchens, including serving as head pastry chef at Sardine in Madison, WI.
She later transitioned into the food distribution space, where she spent eight years in sales and purchasing roles, connecting customers with high-quality produce. Most recently, she helped launch Imperfect Foods in the Midwest, leading produce sourcing efforts nationwide.
Amy is passionate about food as culture, a basic human right, and a key part of a sustainable future. Outside of work, she enjoys cooking, traveling, exploring nature, and hanging out with family and friends.
