Miranda Jackson leads Resource Development for Brighter Bites in Kern County (Bakersfield), Santa Cruz County, and Monterey County, and is based in Carmel, California. She brings extensive experience in nonprofit fundraising and partnership development and is deeply committed to strengthening communities through equitable access to fresh, healthy food. Her career reflects a long-held belief that education and opportunity are essential to helping young people thrive.

Educated in the United Kingdom, Miranda previously held senior leadership roles with UNICEF UK, Amnesty International Hong Kong, and Australian Red Cross. In these roles, she led cross-functional teams across fundraising and partnerships, specializing in trust and foundation fundraising, corporate and business partnerships, special events, major gifts, and Ambassadors. Her work supported programs focused on food security, anti–forced marriage initiatives, Aboriginal and Torres Strait Islander peoples and asylum seeker services, support for people experiencing homelessness, and International Humanitarian Law campaigns.

Prior to joining Brighter Bites, Miranda served as Director of Development at the Boys & Girls Clubs of Monterey County, where she led fundraising and partnership efforts in support of local youth and families.

Miranda’s work is rooted in community. She volunteers as a Court Appointed Special Advocate (CASA), serving as a consistent voice for youth in the foster care system, and mentors first-generation scholarship students from agricultural families as they navigate college.

Outside of work, Miranda enjoys traveling – especially to visit her three children and family in Timor-Leste, Paris, London, Hong Kong, and Sydney. She is an avid gym-goer and a dedicated pickleball player who and values staying active and connected.
