Mia Ellis

Program Coordinator
Austin

Mia is a program coordinator in Austin. She joined the Brighter Bites team in 2020 as a program associate. Mia grew up in Massachusetts and attended the University of Vermont where she graduated with a B.A. in Spanish Language and Literature and a dual-minor in Nutrition and Global Studies. Mia spent a semester abroad on the south coast of Spain where she studied at La Universidad de Málaga and immersed herself in Spanish culture, language, and food.

Mia’s focal point in her studies was food and nutrition access in underserved or disadvantaged populations. Mia volunteered with Common Roots, a farm-to-table food service program that funded nutrition classes in schools and summer camps. She was a coordinator for The Huertas Project, a research program that organized and planted fruit and vegetable gardens for migrant farmworkers in Vermont.

Mia is passionate about sustainability and equitable food access for all, and she believes that public health starts with nutrition. She loves working with Brighter Bites and seeing how the program makes students, families, and teachers equally excited about eating fruits and vegetables. Outside of work, Mia enjoys cooking, drawing, swimming, hiking the Greenbelt trail in Austin, and watching reality TV with her cat, Billy.
